Spinach Pesto Sauce Recipe
I want to get this recipe out to before all those fresh greens start growing in your garden. Spinach Pesto Sauce is a great way to use up an over abundance of green product that you may have. It is great for freezing so you can carry on the freshness of summer all year.

What is Pesto?
What is pesto? It is crushed leave of a green leafy plant, in this case spinach. Crushing verus blending releases the “juice” or oils of the greens to bulk up the pesto.
Basil leaves, parsley leaves are other sources of green leafy plants that can be used when they are very prolife in our summer gardens.
Typically use with pasta, pesto is also great on cracker and with cream cheese. Top it off with a bit of pepper jelly and you have a delicious snack!

Spinach Pesto Sauce
Spinach Pesto Sauce:
Heat the pine nuts in a skillet until golden brown. Combine with spinach, parmesan cheese, garlic, and about 1/2 cup of olive oil in a food processor and blend until smooth.
Pour pesto into a glass or stainless steel bowl and add more olive oil if needed.
Stir in the essential oils.
Ingredients:
1/2 cup pine nuts
2 -3 cups spinach
1 cup parmesan cheese
2 teaspoons mince garlic
1 cup olive oil
1 drop Basil Vitality
1 drop Lemon Vitality
